I'm not sorry that you have that song stuck in your head now. You'll thank me after I share this recipe with you. Pancakes are a staple breakfast food for good reason. I mean, I would never eat cake for breakfast but I regularly eat pan fried cake batter in the form of pancakes and lets be honest those are just vessels for sugary maple syrup! But unless I want to take a nap after my meal I usually like to eat less carbohydrates and more protein for breakfast. That's where this recipe will save your morning productivity.
Gluten-Free Banana Pancakes
Prep time: 5 minutes Cook time: 6 minutes
- 2 eggs
- 1 banana
- 1/2 cup oats
- 1 tsp vanilla
- 1/2 tsp cinnamon
- coconut oil or butter for pan
Place oats in food processor and pulse for about 30 seconds until oats become more like flour. Should still see some whole oats. Next add the rest of the ingredients (eggs, banana, vanilla, and cinnamon). Pulse until completely incorporated and banana is smoothly mixed in. Allow batter to sit for a couple of minutes. While batter is resting heat a pan on medium. Add a little coconut oil or butter to pan to grease.
Pour 1/4 cup of pancake batter in pan at a time. Cook for approximately three minutes, flip cake, and cook for 3 more minutes until golden brown. Dress pancakes with syrup, bananas, or peanut butter (my personal vice). Enjoy your high protein, fibrous morning!
