Can't stop. Won't stop. Eating these pops.
These dairy-free, gluten-free, guilt-free popsicles have all the flavor of key lime pie with an extra cardamom kick! They are the perfect summertime snack or lets be honest... breakfast. Their invention came about to keep my friend Jen and I from getting diabetes. Let me clarify: Jen made some fabulous lime pops with sweetened condensed milk and this was my solution to get all the flavor without all the of bad stuff (slash heaven-sent sweetened condensed milk). And the addition of cardamom and toasted coconut flakes takes me to exotic beaches without even leaving my couch. Win-win I'd say!
Key Lime Cardamom Popsicles
Ingredients
- 1 can full-fat coconut milk (refrigerated overnight)
- 1 cup plain coconut yogurt
- 1/4 cup key lime juice
- 1/4 cup honey
- 1 tsp cardamom
Toppings
- 1 cup toasted coconut flakes
Method
Open can of refrigerated coconut milk and drain liquid. Remove white cream and place in mixing bowl with whisk attachment. Whip for 30 seconds to one minute or until fluffy and forms soft peaks.
In a separate bowl mix together yogurt, key lime juice, honey and cardamom. Gently fold in coconut whipped cream until combined.
Place mixture in popsicle mold or small paper cups with popsicle sticks. Cover and place in freezer for several hours (I waited overnight). Remove from freezer and allow to sit at room temperature for ten minutes or until easy to remove from molds. Roll in toasted coconut flakes until coated. Eat immediately or wrap in plastic and freeze for several weeks.
