I can't believe how quickly this summer has gone. I've been traveling a lot this summer and haven't had a lot of time in my new kitchen. In between jet setting from Miami> Colorado > Nantucket and beyond we moved into a new home just a couple of blocks from our old one. Its cozy here and the kitchen is even cozier. While my pots and pans are still in storage my dear friend Jen was sweet enough to invite me over to make this dreamy summer grilled peach salad.
Jen's backyard garden is filled to the brim with tomatoes, herbs, and even a little berry patch. She is a gardener, painter, dancer, soon-be-doctor and to my delight an exceptional cook. She has more creativity in her pinky finger than I have in my entire body so in every conversation with her I take more inspiration. It is friendships like this that make midwest winters almost bearable. Although, I'm trying not to think about that right now. For the moment I will savory every last piece of summer starting with this salad.
Stay for a while longer sweet summer...
Grilled Peach Salad
yields 4 servings cook time about 30 minutes
- 2 cups arugula
- 2 ripe peaches
- 1/2 cup hazelnuts
- 1/4 cup shaved parmesan
- 1/4 honey
- 1/4 cup water
- 2 rosemary sprigs
- sea salt to taste
heat grill or grill pan to medium. Cut and and pit peaches. Set on grill pan and allow to cook to 5 minutes. Turn 90 degrees and allow to cook for 5 more minutes. Remove from grill and set aside. In a pan on the stovetop combine honey, water, and rosemary sprigs. Heat on medium high until simmering. Allow to simmer stirring occasionally for 30 seconds. Set aside. Coarsely chop hazelnuts. Heat separate pan on stovetop to medium. Add hazelnuts and toast for 1 to 2 minutes or until golden brown.
Add 1/2 cup arugula to each place. Place peach grilled side up on top of arugula. Sprinkle a small amount of parmesan atop peach to taste.
Remove rosemary sprigs from honey. Drizzle 1/2-1 Tablespoon of honey syrup on to peach. Garnish with small amount of sea salt to taste. Eat over good conversation with talented friends.
